Lefse


Learn the fine points in making the dough, baking, storing and serving lefse. We will begin with real potatoes and authentic recipes, and a more modern version using instant potatoes. Plan to sample your fresh, warm creations with traditional fillings, plus take home finished lefse and dough to share.

Laurel Severson

Instructor Laurel Severson is a graduate of the University of Minnesota with a double major in Home Economics and Education. Laurel currently works in many Community Education districts throughout the metro area teaching participation cooking classes. She has traveled extensively including living in the Philippines for one year and in London for two years. An avid collector of cookbooks, Laurel generously shares culinary tips with students. She entertains extensively in her 1882 home and is an energetic volunteer within her St. Paul community. For example, this fall, one volunteer project includes heading up the kitchen crew to feed 500 for a spaghetti supper fundraiser.
